There’s nothing better than the smell of freshly baked bread rolls filling your kitchen.
These homemade pistoletjes are wonderfully soft on the inside and have that perfect, crispy crust on the outside.
They’re ideal for breakfast, lunch, or to serve alongside a warm meal.
And the best part? You only need a few simple ingredients to make them yourself! 💛
🧂 Ingredients (makes about 6 rolls)

1 cup lukewarm water

3 g fresh yeast
-
2.5 cups all-purpose (patent) flour

Baking time: 30 minutes (20 minutes covered + 10 minutes uncovered)

Oven temperature: 220°C / 428°F
👩🏽🍳 Instructions
1. Dissolve the yeast
- In a bowl, dissolve the fresh yeast in the lukewarm water and stir until fully dissolved.
2. Make the dough
- Add the flour to the yeast mixture and mix until a sticky dough forms.
- Let the dough rise for 30 minutes in a warm place.
3. First stretch and rise
- Stretch the dough gently, shape it into a ball, and let it rise again for 30 minutes.
4. Second stretch
- Repeat the process once more: stretch, form a ball, and let it rise for another 30 minutes.
5. Final stretch and long rise
- Stretch the dough one last time and shape it into a smooth ball.
- Let it rise for 2 hours, until doubled in size and full of air.
6. Divide and shape
- Divide the dough into 6 equal pieces.
- Pinch the ends together and roll each piece lightly into a ball.
- Let them rest for 10 minutes.
7. Shape the pistoletjes
- Shape each ball into a small, elongated roll (like a sausage).
- Let the shaped rolls rise for another 30 minutes.
8. Prepare for baking
- Lightly dust the rolls with flour and make a shallow slit on top using a sharp knife.
- Sprinkle a little water onto the baking tray this creates steam for an extra crispy crust.
9. Bake
- Place the rolls on the tray and cover them with a second baking tray (or oven lid).
- Bake for 20 minutes at 220°C (428°F).
- Then remove the lid and bake for another 10 minutes, until golden brown.
10. Serve
Let the pistoletjes cool on a wire rack and enjoy your freshly baked, warm rolls! 🥖
