1️⃣ Air starts at the base
Whether you’re working with eggs and sugar or butter and sugar —
this step determines how much air you build into your batter.
Take your time here.
Don’t rush it, but also don’t mix without paying attention.

2️⃣ Flour changes everything
The moment you add flour, your strategy must change.

Overmixing removes air and makes your cake dense instead of light.
