πŸ”₯ Oven Temperature: The Most Underrated Factor in Baking

Side-by-side comparison of a cake baked at incorrect oven temperature versus correct oven temperature, showing differences in texture, color, and crumb structure.

Today we’re talking about something almost every baker underestimates:

πŸ‘‰ oven temperature πŸ”₯

Even the best recipe can fail if your oven doesn’t do what you think it does.
And trust me… almost every oven lies.

With the insights below, you’ll notice that using the same recipes will suddenly give you much better results πŸ‘‡

πŸ”₯ My Most Important Oven Tips (That Always Make a Difference)

1️⃣ Your oven is almost never what it claims

You set your oven to 180°C (356°F)
but in reality, it might be 165°C or even 195°C.

That difference alone is enough to:

  • cause cakes to collapse

  • dry out the edges

  • or leave the center underbaked

πŸ‘‰ That’s why I always recommend using an oven thermometer.
It’s a small investment that saves a lot of frustration.

2️⃣ Do NOT open the oven during the first 60% of baking time

Every time you open the oven door, you lose 20–30°C.

This can cause:

  • ✘ collapsed cakes

  • ✘ uneven layers

  • ✘ dry edges with a wet center

πŸ‘‰ Let the oven do its job.
Only check after more than half of the baking time has passed.

Patience is a baking skill πŸ’š

3️⃣ Know the hot zones of your oven

Not every part of the oven heats the same way:

πŸ”₯ Top → hotter
πŸ’§ Bottom → often more humid
⚖️ Middle → usually the most stable

πŸ“Œ Cakes: always bake in the center
πŸ“Œ Brownies, cookies, crusts: slightly lower is fine

4️⃣ Let your cake rest in the oven for 10 minutes

After baking, I turn off the oven and leave the cake inside for 10 minutes with the door slightly open.

This helps prevent:
✔ cracks
✔ sudden collapse
✔ temperature shock

A small habit — with a big impact on your final result.
