Honestly? I made these mistakes myself in the past π
Today I’m sharing pure value with you:
the 5 most common baking mistakes that can quietly ruin your results — even when your recipe is correct.
Do you recognize them?
Then you’ll immediately see where you can improve π
❌ 1. Ingredients Not at Room Temperature
Cold butter, cold eggs, or cold milk can cause your batter to split or curdle.
The result:
❌ less air
❌ uneven batter
❌ a dense, compact cake
π Ingredients at room temperature always mix better and create a lighter cake.
❌ 2. Overmixing… or Undermixing
This is where it often goes wrong:
Overmixing → heavy, dense cake
Undermixing → uneven texture
π The secret is timing and technique.
That’s exactly why I spend so much time on this in my workshops.
❌ 3. Opening the Oven Too Soon
Every time you open the oven door, the temperature drops by 20–40°C.
The result:
collapsed cakes
air pockets
cakes that don’t rise properly
π Only open the oven once at least 70% of the baking time has passed.
❌ 4. Incorrect Oven Temperature
Many bakers bake too hot.
Too hot → cake rises fast and then collapses
Lower temperature → more even, stable results
π I strongly recommend using an oven thermometer.
Most ovens are not as accurate as they claim.
❌ 5. Poor Preparation
Most failed cakes aren’t caused by the recipe…
but by stress and rushing.
π Always prepare in advance:
ingredients
baking pan
tools
This makes baking calmer, more enjoyable, and far more successful.
