1. Ingredients Not at Room Temperature

Cold butter, cold eggs, or cold milk can cause your batter to split or curdle.

The result:

  • ❌ less air

  • ❌ uneven batter

  • ❌ a dense, compact cake

2. Overmixing… or Undermixing

This is where it often goes wrong:

  • Overmixing → heavy, dense cake

  • Undermixing → uneven texture

3. Opening the Oven Too Soon

Every time you open the oven door, the temperature drops by 20–40°C.

The result:

  • collapsed cakes

  • air pockets

  • cakes that don’t rise properly

4. Incorrect Oven Temperature

Many bakers bake too hot.

  • Too hot → cake rises fast and then collapses

  • Lower temperature → more even, stable results
