Recipe Repa di Pampuna – Traditional Pumpkin Pancakes with a Tropical Twist | Browny’s Cakes

These Repa di Pampuna, or Caribbean pumpkin pancakes, are soft, lightly sweet, and full of flavor  perfect for breakfast, brunch, or a delicious snack.
The recipe is simple, yet the result is pure comfort food with a touch of Caribbean warmth. 💛


Ingredients

🥣 1 ½ cups pureed pumpkin
🧂 ¼ teaspoon salt
🍂 ½ teaspoon cinnamon
🌾 ½ cup all-purpose flour (patent flour)
🍬 2 tablespoons sugar
🍯 ½ teaspoon vanilla extract
🥛 ½ cup milk
🍇 ½ cup raisins
🧈 A little butter for frying


Instructions

Cook and puree the pumpkin

  • Cook a piece of pumpkin in a saucepan with the salt until soft.
  • Once tender, puree it with a hand blender until smooth.

Mix the base

  • Add the cinnamon, sugar, vanilla extract, and milk to the pureed pumpkin.
  • Whisk everything together until well combined and smooth.

Add flour and raisins

  • Add the flour and whisk the batter briefly until smooth.
  • Then stir in the raisins.

Cooking time

  • Heat a frying pan with a little butter.
  • Pour a small amount of the batter into the pan and fry the pancakes on both sides until golden brown.

Serving
Serve your Repa di Pampuna warm with a drizzle of syrup or simply enjoy them as they are, they’re irresistible! 🍯
