There’s nothing cozier than the smell of warm pumpkin filling your kitchen.
These Repa di Pampuna, or Caribbean pumpkin pancakes, are soft, lightly sweet, and full of flavor perfect for breakfast, brunch, or a delicious snack.
The recipe is simple, yet the result is pure comfort food with a touch of Caribbean warmth. 💛
Ingredients
🥣 1 ½ cups pureed pumpkin
🧂 ¼ teaspoon salt
🍂 ½ teaspoon cinnamon
🌾 ½ cup all-purpose flour (patent flour)
🍬 2 tablespoons sugar
🍯 ½ teaspoon vanilla extract
🥛 ½ cup milk
🍇 ½ cup raisins
🧈 A little butter for frying
Instructions
Cook and puree the pumpkin
- Cook a piece of pumpkin in a saucepan with the salt until soft.
- Once tender, puree it with a hand blender until smooth.
Mix the base
- Add the cinnamon, sugar, vanilla extract, and milk to the pureed pumpkin.
- Whisk everything together until well combined and smooth.
Add flour and raisins
- Add the flour and whisk the batter briefly until smooth.
- Then stir in the raisins.
Cooking time
- Heat a frying pan with a little butter.
- Pour a small amount of the batter into the pan and fry the pancakes on both sides until golden brown.
Serving
Serve your Repa di Pampuna warm with a drizzle of syrup or simply enjoy them as they are, they’re irresistible! 🍯
